St. Patty’s weekend recap

I find the best way to get through a busy or mundane Monday is to ride the high from the weekend! I spent most of Saturday doing nothing. I was feeling kinda bleh so it was nice to be low key. Got the AC unit inspected, napped and made corned beef and cabbage in the slow cooker.

If you’ve never made it this way, I highly recommend it. I’ve made this the past two or three years and it never disappoints. My basic instructions are to simply place brisket in the slow cooker with spice packet it comes with. Pour in 3 cups of water and set on high for 6 hours. Then I add quartered carrots, potatoes and cabbage and leave for another 30 minutes. Then, serve!

Mmmmmm, St. Patrick would be proud.

You really can’t mess it up. This year, I used more water and put the carrots and cabbage in right from the beginning. They were a bit mushier than normal but still in-tact and delicious. We also opted to mash our potatoes. No matter what, your belly will be happy and your house will smell amazing.

We walked around Old Town St. Augustine for a little while. Jeremy found a store after his own heart:

Yep, it was a whole store dedicated to jerky. Many flavors and species. Black Pepper Wild Boar was our favorite!

OK, there was some non-jerky items, too like this canned rattlesnake meat.

We didn’t try it. Instead, we thanked the owner and headed down to the Fort.

And enjoyed the view.


We only stayed a couple of hours but it felt like a mini getaway.
